Artichoke and Baby Arugula Salad

with Black Garlic Vinaigrette

1/4 cup extra virgin olive oil

1 1/2 tablespoon Chef Mitch Maier Black Garlic Sauce & Marinade

2 teaspoons garlic

8 each artichoke heart

8 cups arugula, (roquette)

2 cups cherry tomato

4 tablespoons kalamata olive

3/4 cup parmesan cheese

1/4 cup chive






For the vinaigrette:

Whisk together olive oil, Black Garlic Sauce & Marinade, and garlic in a small bowl.

Season with salt and pepper to taste.

For the salad:

Toss together arugula, artichoke hearts, olives and Black Garlic Vinaigrette.

Top with tomatoes, Parmesan, and chives(or green onions).

Season with salt and freshly ground black pepper to taste.
